In Japanese, Santoku means “three virtues.” Created by Messermeister of Solingen, Germany, these prep knives are renowned in culinary circles for their quality and versatility in cutting vegetables, fish, or meat. The edge of the Santoku is straight, not serrated. A line of divets, called “kullens,” are shaped out of the edge of the blade. Kullens are designed to prevent food from sticking. The extra wide blade on this prep knife is fully forged with the “Elite” edge – meaning that the blade, bolster, and tang are one piece and hammer forged from a single billet of the finest German steel alloy. The blade has a polished spine and a bolsterless edge, so that the entire edge can be sharpened. The knife is available with a 5″ or 7″ blade.
